Baked apple with eggnog

Ingredients for 4 servings:

  • 4 apples
  • 40 g cranberries
  • 4 tbsp orange juice
  • 100 ml whipped cream
  • 250 g yogurt (vanilla)
  • 1 packet of vanilla sugar
  • 8 cl eggnog
  • 20 g almond(s), flakes

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash 4 apples (175g each) and core them with an apple corer. Cut a slit lengthwise around the apple skin. Fill the apples with 40g cranberries and place them in a baking dish. Pour over 4 tablespoons of orange juice and roast in a preheated oven at 200°C (gas mark 3, fan oven 180°C) for 35-40 minutes. Meanwhile, whip 100ml of heavy cream until stiff. Mix together 250g vanilla yogurt, 1 packet of vanilla sugar, and 8cl of advocaat. Briefly fold in the cream. Roast 20g flaked almonds in a dry pan until golden brown. Place the baked apple on a dessert plate. Serve with the advocaat sauce and flaked almonds.
