Ingredients for 2 servings:
- 170 g rice pudding
- 25 g chia seeds
- 50 g sugar
- 300 ml milk
- 225 ml milk, optionally for pouring over during cooking
- 100 g yogurt
- 350 g currants
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 10 minutes
Whisk the rice pudding with the chia seeds, sugar, and milk and bring to a boil over high heat for 3 minutes. Then simmer for 20-25 minutes, stirring occasionally and adding more milk. Once cooked, stir in the yogurt and pour everything into a casserole dish. Top with the currants and bake in the oven at 160°C for about 40 minutes. Serve warm or cold.
