Apple and onion chutney

Ingredients for 4 servings:

  • 1 kg apples
  • 3 onions
  • 150 g sugar
  • 400 ml white wine vinegar or fruit vinegar
  • 1 tsp salt
  • n. B. Pfeffer
  • e.g. chili flakes
  • 3 cm ginger

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and chop the apples and onions. Lightly caramelize the sugar. Add the apples and onions and deglaze with vinegar. Peel the ginger, finely chop it along with the chilies, and add it to the simmering mixture. Season with spices and cook until soft. If you like, you can also pass everything through a food mill. Immediately pour the hot chutney into sterilized screw-top jars and seal tightly.
