Ingredients for 1 servings:

  • 1 liter buttermilk
  • 150 g beetroot syrup or honey
  • 3 sachets of yeast (dry yeast)
  • 1 tbsp salt
  • 500 g flour, dark, type 1050
  • 300 g rye meal
  • 300 g wheat bran
  • 150 g sesame seeds
  • 150 g flaxseed
  • 250 g sunflower seeds

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Warm the buttermilk with the beetroot syrup or honey. Combine the other ingredients in a bowl and mix. Add the warmed buttermilk and mix thoroughly. Pour the mixture into a bread pan and bake for 3 hours at 160°C on the middle rack of a preheated oven. After 2 hours, cover the bread with aluminum foil. Remove the bread from the pan and let it cool. To ensure it’s easy to slice, let it stand in a dry place for at least 1 day.
