Quinoa curry

Ingredients for 4 servings:

  • 300g quinoa
  • 500 ml vegetable stock
  • 2 bell peppers, yellow
  • 1 onion(s)
  • 250 g broccoli
  • 150 g natural yogurt, 1.5% fat
  • 2 tsp, heaped curry powder
  • some mustard, hot

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

vegetarian

Wash the quinoa thoroughly and drain. Dice the onion and bell pepper and sauté briefly. Add the quinoa and vegetable stock. Cover and simmer for 10 minutes over medium heat. Add the broccoli florets. Cover and simmer for 10 minutes. Stir occasionally and add more liquid if necessary. Add the natural yogurt, curry powder, and mustard and stir well.
