Ingredients for 4 servings:
- 500 g minced pork, roughly minced, with a fat content of approx. 25%
- 6 large garlic cloves, chopped
- 1 large onion(s), chopped
- 2 chili peppers, red, hot
- 3 tbsp, heaped flat-leaf parsley, chopped
- 1 tbsp, heaped thyme, dried
- 2 tbsp, heaped marjoram, dried
- 1 tbsp, heaped oregano, dried
- 1 tsp, heaped rosemary
- 1 tbsp Dijon mustard
- 1 egg(s)
- 1 bread roll, soaked in carbonated mineral water
- Sea salt, coarse
- Pepper, from the mill
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Knead all ingredients into a dough. Be careful when seasoning with coarse sea salt, as it quickly becomes too salty. If using fresh herbs, add more. Form 2-3 cm thick meatballs and grill them on the oven rack at 250°C (fan oven) for about 5 minutes.
