Mushrooms in sherry cream

Ingredients for 2 servings:

  • 250 g mushrooms
  • 2 tbsp parsley, chopped, fresh or frozen
  • 1 onion(s)
  • 1 dash of cream
  • 1 shot of sherry
  • salt and pepper
  • garlic powder
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Finely chop the onions and sauté in a little oil until translucent. Slice the mushrooms and add them to the onions. Cover and sauté over medium heat until the mushrooms have reduced considerably in volume. Stir occasionally. Remove the lid and increase the heat. Once the liquid in the pan has evaporated, fry the mushrooms until they begin to brown, then deglaze with a good shot of sherry (about a shot glass full). Add a dash of cream and season with parsley, garlic powder, salt, and pepper. Goes well with meat or, for a vegetarian dish, with hash browns. Variation: Spread the mushrooms on hash browns and top with spicy cheese in the oven.
