Peas – smoked salmon – salad

Ingredients for 4 servings:

  • 200 g smoked salmon, sliced
  • 350 g peas (frozen)
  • Salt
  • 1 pinch(s) of sugar
  • 3 tbsp vinegar (wine vinegar)
  • Pepper, freshly ground
  • 5 tbsp oil
  • 2 onions, red
  • 100 g celery
  • 1 tbsp parsley, chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the peas in salted water with the sugar. Cool and drain. Mix the vinegar, pepper, and oil to make a salad dressing and toss the diced onions in it. Cut the salmon and trimmed celery into strips. Toss the vegetables and salmon in the salad dressing, add more salt if desired, and let it marinate for 30 minutes. Serve with hot baguette.
