Iberico loin with Brazil nut

Ingredients for 1 servings:

  • 200 g pork (Iberico pork loin)
  • 20 g Brazil nuts
  • ½ tsp Crema di Balsamic vinegar
  • 1 tbsp clarified butter
  • n. B. Salt
  • n. B. Pfeffer

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Preheat the oven to 80 degrees Celsius (180 degrees Fahrenheit). Finely chop the Brazil nuts. Place a shallow dish in the oven. Heat the clarified butter in a pan and sear the loin on both sides. Place the loin in the dish. Briefly toss the Brazil nuts in the pan and mix with the cream. Then top the loin with the nuts. Let them cook in the oven for about 40 minutes.
