Ingredients for 4 servings:

  • 4 portions of roast beef (roast beef), approx. 180 g each
  • 100 g bacon, cut into strips
  • n. B. Salt
  • n. B. Pfeffer
  • 3 onions, finely chopped
  • 3 cloves garlic, sliced
  • 50 g butter
  • 40 g flour, smooth
  • ⅛ liter must (grape must), red
  • 0.38 liters of apple cider
  • e.g. parsley

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Season the roast beef pieces with salt and pepper on both sides. Heat the butter and sear the meat on both sides. Remove from the pan. Brown the bacon, onion, and garlic in the remaining roasting juices, then dust with flour. Pour in the must mixture and return the roast beef pieces to the pan. Cover and simmer over low heat until soft. The sauce should have a creamy, thick consistency. Serve the roast beef pieces with the juices and sprinkle with chopped parsley.
