Pancakes with Bacon

The perfect pancakes with bacon recipe with a picture and simple step-by-step instructions.

  • 1 bottle Pancake mix
  • 350 ml Water
  • 100 g Breakfast bacon
  • 35 leaf Spinach
  • 150 g Grated cheese
  • 20 g Butter
  • 15 Pc. Snack tomatoes
  • 1 packet Room sauce
  • 250 ml Water
  • Pepper from the grinder
  • Chilli from the mill
  • Salt
  1. Yes, yes, I know, I could have made pancake batter myself but since I still had a bottle of edgy and clear mix I used it for my “crazy idea” …. doesn’t do anything if it’s just standing around ;-)))
  2. Fill the pancake mix with 350ml of water (up to the mark) and shake well – nothing should stay in the bottle. Rinse the spinach briefly and place on a crepe, preheat the oven to about 50 degrees. this is the temperature I need to keep warm.
  3. Pan filled with butter, not too much because the pancake should bake and not float. On a low flame it is easier to overlook when and how to put the spek on the dough and of course the spinach too. Seasoning with pepper and chilli from the mill, I did without salt because it is already rich in the bacon.
  4. If the batter of the pancake, with the bacon & spinach, is not translucent but matt, you can turn it and bake it a little further. In the meantime, grease a baking dish & grate cheese. When the pancake is baked, place it on baking paper so that the bacon and spinach look at me, with the covered area facing up.
  5. Roll up the grated cheese and the pancake and place with the lower edge in the baking dish. Put the pan in the oven to keep it warm. Repeat this until the dough is used up. It took about 10 minutes for the cheese to be crispy brown.
  6. I used these 10 minutes to lightly bake snack tomatoes & the remaining spinach with a little butter in a Kaserole. Then I took some salt to flavor it. A cream sauce “conjured up” from a ready-made brand, I know I know that is not so popular, but I was a bit lazy there. You can also eat it without sauce!
  7. The pancakes are ready, so are the tomatoes / spinach … it’s ready to be served. Halve the pancakes horizontally, put them on the plate, add tomatoes & spinach & put on the table. I thought it was delicious & there is also something for tomorrow. It can also be combined differently, each according to his taste ;-))))
