Passion fruit and pomegranate ice cream

  • 5 passion fruit(s), red
  • 1 pomegranate
  • 300 g Greek yogurt
  • 200 ml cream, 35%
  • 50 g xylitol (sugar substitute)

Halve the passion fruit and scoop out the insides with a spoon. Place the flesh and seeds into a mug. Halve the pomegranate. Place a sieve over a bowl and collect the pomegranate seeds. Set aside 2 tablespoons of seeds for decoration. Squeeze out the remaining seeds with the back of a spoon, collect the juice, and add it to the passion fruit in the mug. Tip: I used just under 100g of passion fruit mixture and 70g of pomegranate juice. Add xylitol, yogurt, and cream and mix thoroughly. Pour the mixture into the ice cream maker and prepare according to the instructions. Garnish each ice cream with a few pomegranate seeds. A tip for passion fruit: I personally don’t mind the seeds. If you don’t like them, press the mixture through a sieve. However, allow 2-3 more fruits for the same amount of passion fruit mixture.
