Greek yogurt ice cream with elderberry

Ingredients for 4 servings:

  • 400 ml whipped cream
  • 120 g egg yolk
  • 60 g sugar
  • 500 g Greek yogurt
  • 120 ml elderberry syrup
  • 3 tbsp lemon juice

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

In a mixing bowl, combine the whipped cream, egg yolks, and sugar over steam to form a rose. Whisk the yogurt, elderflower syrup, and lemon juice until smooth and mix with the royal jelly. Place the mixture in the ice cream maker or freezer for 1 hour, stirring every 10 minutes. If it becomes too icy, replace some of the sugar with glucose at the beginning or add a little alcohol.
