Ice cream with a delicate cinnamon flavor

Ingredients for 1 servings:

  • 125 ml milk
  • 300 ml cream
  • ½ vanilla pod(s)
  • ½ tsp ground cinnamon
  • 4 large egg yolks
  • 120 g sugar
  • 1 pinch of salt

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Pour the milk and cream into a large saucepan. Halve the vanilla pod, scrape out the seeds, then add both (pod and seeds) and the cinnamon to the cream mixture. Bring to a boil, stirring occasionally. In the meantime, beat the egg yolks with the sugar and salt until thick and creamy. Once the cream mixture has boiled, remove from the heat. Slowly add half of the mixture to the egg cream, stirring constantly. Return the mixture to the saucepan and heat over a medium heat, stirring constantly, for about 3-4 minutes until thickened. It is very important that it does not boil. Remove from the heat, remove the vanilla pod, pour it into a plastic container and leave to cool. Cover with film or a lid and refrigerate for at least 4 hours. Then churn in an ice cream maker according to the manufacturer’s instructions until you have ice cream. Serve in dessert glasses or bowls.
