Ingredients for 2 servings:

  • Syrup 1 :
  • 125 ml water
  • 100 g sugar
  • Syrup 2 :
  • 45 g fresh ginger, peeled and sliced
  • 150 ml water
  • 70 g sugar
  • 375 g strawberries, fresh, cleaned, stemmed
  • 125 ml fresh lemon juice
  • 400 ml mineral water, cold
  • 3 strawberries, sliced, to serve
  • 3 slice(s) lemon(s), to serve
  • ice cubes

For the first syrup, put the water and sugar in a saucepan. Bring to a boil briefly, stirring until the sugar has dissolved. Remove from the heat, set aside, and let cool. In a second saucepan, mix the water and sugar. Add the peeled and sliced ​​ginger and bring to a boil, stirring occasionally. Reduce the heat and simmer gently for about 10 minutes. Remove from the heat, let cool, and then remove the ginger slices. Place the hulled, stemmed strawberries in a tall blender and puree until fine. Pass through a fine sieve into a larger bowl to remove the seeds. Then add the lemon juice, 75 ml of the first syrup, and 3 tbsp of the ginger syrup to the strawberry puree. Anything left over can be refrigerated and used later. Now add the well-chilled mineral water and mix everything well. Add the strawberry slices and stir briefly. Add a few ice cubes to two or three glasses, depending on the size, and fill with the cocktail. If desired, add a lemon slice to each glass, or to the rim, and serve immediately.
