Ingredients for 4 servings:
- 200 g nougat, finely chopped
- 1 tbsp honey
- 2 egg whites
- 250 g cream, lightly whipped
- 5 tbsp sugar
- 100 g hazelnuts, whole
- Butter, for the molds
- n. B. Fruit
Instructions
Working time approx. 30 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 30 minutes
with fine brittle
For the brittle, carefully melt the sugar in a pan, add the hazelnuts, mix, and pour onto baking paper. Let cool. Set aside half of the brittle for the garnish, then roughly chop the rest with a knife. Quickly beat the egg whites until fluffy. Melt the nougat, mix with the honey, and fold in the whipped cream, brittle, and egg whites. Pour into buttered molds and freeze for about 8 hours. Remove from the molds and serve with fruit (or a mirror) of your choice and the remaining brittle. The parfait is quite sweet. If you don’t like it that much, simply reduce the amount of sugar.
