Egg salad with onions and gherkin

Ingredients for 4 servings:

  • 6 eggs
  • Pickle(s)
  • 1 onion(s)
  • Miracle Whip
  • Milk
  • Mustard
  • Chives or parsley
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the eggs until well hard-boiled. Peel and dice. Dice the gherkins (you decide how many; I use 2 medium gherkins for 4 eggs). Peel the onion and dice it too. Add Miracle Wip, about 5 large tablespoons, and a little mustard. Then add a little milk so the salad isn’t too thick. You’ll have to experiment with the amounts yourself. Finally, finely chop the chives and mix them in. Or, if you prefer parsley, just chop it and mix it in. Season to taste with salt and pepper. Delicious.
