- ½ package creamed spinach
- 2 eggs
- 2 tbsp cream or condensed milk
- some margarine for frying
- 2 tomatoes
- salt and pepper
- nutmeg

quick, healthy dish
Cook the creamed spinach according to the package instructions and season with salt and nutmeg. Whisk the eggs and cream for about 2 minutes until frothy, then season with salt and nutmeg. Make an omelet from the mixture. Pour the mixture into a pan with hot margarine and cover. When the omelet is ready, fill it with the spinach and serve immediately. Tomatoes go well with this, briefly sautéed in the hot pan, turning occasionally, and seasoning with salt and pepper.
