Ingredients for 1 servings:

  • ½ cube of yeast
  • 4 tbsp water, lukewarm
  • 300 g wheat flour (type 405)
  • 200 g quark (40%)
  • 60 g sugar
  • 50 g butter, soft
  • 2 eggs
  • ½ tsp salt
  • Flour for the work surface
  • Fat for the mold

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Dissolve the yeast in the warm water. Combine the flour, quark, sugar, softened butter, both eggs, and salt in a bowl, mix well, and stir in the dissolved yeast. Punch down the dough slightly and knead it on a floured surface until smooth and shiny. Grease a 25 cm loaf pan, shape the dough into an oblong loaf, and place it in the pan. Preheat the oven to 50°C. Let the bread rise on the middle rack for about 20-30 minutes, until it has doubled in size. Then place the pan on the lowest shelf and set the oven to 200°C. Bake the bread for 30-35 minutes. It browns very quickly, so keep an eye on it and have a suitable piece of aluminum foil ready to cover it. Fan-assisted baking is not recommended.
