Almond – Honey – Snails

Ingredients for 4 servings:

  • 250 g flour, whole wheat flour
  • 50 g honey
  • 1 egg yolk
  • 20 g yeast
  • ½ tsp salt
  • 125 ml milk, warm
  • 40 g butter, melted
  • 150 g almond(s), ground or finely chopped
  • 1 egg white
  • 80 g honey
  • 3 tbsp water

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Make a soft yeast dough from the first 7 ingredients. To do this, dissolve the yeast in the milk and knead it with the other ingredients. Let it rise until the dough has doubled in size. At least half an hour. Mix the remaining ingredients in a small bowl. Knead the dough again and roll it out on a floured surface into a rectangle (45 x 30 cm). Spread with the almond mixture, roll it up from the long side and cut into about 15 pieces. Let it rise again on the baking tray until the snails have noticeably increased in size. Bake at 200°C for 15-20 minutes. We always like to take these snails with us on nice picnics. The kids love them.
