Almond rolls

Ingredients for 1 servings:

  • 300 g ground almonds
  • 4 drops of bitter almond flavor
  • ½ lemon(s), grated peel
  • 250 g sugar
  • 1 pinch of salt
  • 3 egg whites
  • 100 g powdered sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Mix everything together well except for the egg whites and powdered sugar. Beat the egg whites until stiff peaks form and stir them into the almond mixture to form a fairly firm dough. If the dough is too soft, add more almonds. Line a baking tray with baking paper. Form the dough into 3 cm thick balls and place them on the tray, leaving plenty of space between them, as they will expand during baking. Bake in a preheated oven on the middle rack at 150°C for 30 minutes until light golden. Do not let them brown! Dust the hot almond rolls with powdered sugar and let them cool. Makes about 35 rolls. Delicious with afternoon coffee or with butter and jam for breakfast.
