Chicken and pepper strips

Ingredients for 2 servings:

  • 400 g chicken breast
  • 2 tbsp flour
  • 1 large bell pepper(s), red
  • 1 large onion(s)
  • 1 tbsp paprika powder, sweet
  • 2 tbsp oil
  • 125 ml chicken broth
  • 125 ml cream
  • salt and pepper
  • 2 tbsp tomato paste

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Wash the chicken breast, pat dry, and cut into thin strips. Mix the flour with a little salt and pepper and toss the meat in it. Peel the onions and slice into rings. Deseed and core the peppers, wash them, and slice them into strips. Brown the meat vigorously on all sides in hot oil over medium heat. Add the onion rings and pepper strips and sauté. Sprinkle with paprika and stir briefly. Add the cream and stock. Stir to combine, cover, and simmer over low heat for 15 minutes. Stir in the tomato paste and season with salt and pepper. Serve the strips with rice, pasta, or hash browns.
