Chicken fillet in basil cream

Ingredients for 4 servings:

  • 750 g chicken fillet(s)
  • 500 g carrot(s)
  • 2 onions, sliced
  • 2 cloves garlic
  • 2 tbsp oil
  • salt and pepper
  • 500 ml chicken broth
  • 250 ml cream
  • 1 small bunch of basil
  • Sauce thickener

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the chicken fillet into large cubes. Slice the carrots diagonally into thin slices. Heat the oil and fry the meat cubes until golden brown. Season with salt and pepper. Remove the meat. Add the carrots, onions, and garlic to the pan and sauté for about 5 minutes. Pour in the chicken stock and cream and bring to a boil. Then add the meat and simmer over medium heat for about 10-15 minutes. Pluck the basil leaves from the stems and add them to the meat 2-3 minutes before the end of the cooking time. Stir in the sauce thickener and bring to a boil briefly. Season to taste with salt and pepper. Serve with rice or white bread.
