Filled apple cookies

Ingredients for 1 servings:

  • 240 g quark
  • 70 g sugar
  • 1 large egg(s)
  • 75 ml oil (sunflower oil)
  • 70 g butter, melted
  • ½ tsp vanilla extract
  • 1 pinch of salt
  • 1 tsp lemon(s), zest
  • 315 g flour
  • 1 tsp baking powder
  • 3 apples
  • 3 tbsp raisins (golden)
  • 15 g butter
  • 70 g sugar
  • 1 lemon(s), peel cut into strips
  • 1 tsp lemon(s), the juice
  • 1 large egg(s)

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

For the dough, melt the butter, then mix together the quark, sugar, egg, oil, butter, vanilla extract, salt, and lemon zest. Mix the flour with the baking powder and stir in. Preheat the oven to 180°C and line a baking sheet with baking paper. Peel, quarter, and dice the apples. Place them in a small saucepan with the raisins, butter, sugar, lemon zest, and lemon juice and heat the mixture until soft. Simmer for about 5 minutes, until the apples are soft. Set aside, allow to cool completely, and remove the lemon zest. Roll out the dough on a well-floured surface to a thickness of about 5 mm. It will be a little soft, so dust the top with flour as well. Use an 8 cm round cookie cutter to cut out circles. Place these on the prepared baking sheet using a spatula. Place a heaped teaspoon of the apple mixture into the center of each cookie, leaving a border of about 1cm free. Brush this edge with the beaten egg, place a second cookie on top, and press it down firmly. Finally, brush the cookies with the egg. Place them in the oven and bake for about 20-30 minutes until golden. Let them cool on the baking sheet for about 2 minutes, then transfer to a wire rack and let them cool completely. These apple cookies taste best fresh; depending on the size, the batter will yield 10-15 cookies.
