Ingredients for 1 servings:

  • 125 g sugar
  • 3 eggs
  • 1 packet of vanilla sugar
  • 1 pinch of cinnamon
  • 1 tbsp rum
  • 60 g almonds (sticks)
  • 125 g hazelnuts
  • 125 g fig(s), dried
  • 125 g candied lemon, fresh
  • 250 g raisins
  • 125 g wheat flour
  • 1 tsp baking powder

Wash the raisins and dried figs and pat dry with a paper towel. Cut the figs into fairly small pieces. Cut the candied lemon peel (available fresh from health food stores) into small cubes. Beat the eggs until frothy and gradually add the sugar and vanilla sugar. Beat until the mixture is creamy (about 5 minutes with a whisk). Then add the spices, almonds, hazelnuts, fig pieces, candied lemon peel, raisins, and the flour mixed with the baking powder and mix everything well. Grease a loaf pan, line it with baking paper, then grease it again and pour in the batter. Place the pan on the lowest rack in the preheated oven. Bake at 150°C for about 80-90 minutes. TIP: Instead of figs, candied lemon peel, and raisins, you can also use 125g each of dried apricots and apples and 250g of prunes. Cut the dried fruit into small pieces and soak in rum for 3 hours.
