Tony's Apple Bread

Ingredients for 1 servings:

  • 600 g apples
  • 200 g sugar
  • 200 g raisins
  • 200 g hazelnuts, whole
  • 1 tsp, levelled clove(s), ground
  • 1 tsp, levelled cinnamon, ground
  • 1 tsp, heaped cocoa powder
  • 1 tbsp rum
  • 400 g flour
  • ¼ pack of baking powder
  • Powdered sugar, optional

Working time approx. 45 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 45 minutes

Peel the apples, coarsely grate them, and mix with the sugar. Let them stand for at least 6 hours, or overnight if possible, so they can draw their juices. Rinse the raisins in hot water and drain. Add them to the apples along with the hazelnuts, spices, cocoa, and rum and mix in. Mix the flour with the baking powder, sift it over the apple mixture, and stir in. If the mixture is too dry, add a dash of apple juice. Pour the batter into a large loaf pan lined with baking paper, smooth it out, and bake in an oven preheated to 180°C on the second rack from the bottom for about 70 minutes. Let it cool in the pan for about 30 minutes, then turn out onto a wire rack and sprinkle with powdered sugar if desired. Wrapped in aluminum foil, the apple bread will keep for several days.
