Cinnamon parfait

Ingredients for 4 servings:

  • 2 egg yolks
  • 100 g powdered sugar
  • 250 ml cream
  • 1 tsp cinnamon
  • 1 jar sour cherries
  • possibly Baileys Irish Cream
  • possibly cocoa powder
  • possibly flavoring (vanilla)
  • cornstarch

Instructions

Working time approx. 20 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 20 minutes

Whisk the egg yolks and powdered sugar until frothy. Whip the cream with cinnamon until stiff peaks form, then mix with the egg yolk and sugar mixture. Pour into a loaf pan and freeze for a few hours. Thicken the cherries with a little cornstarch. Once the parfait has set, slice it and serve with the cherries.
