Cherry marzipan tartlets

Ingredients for 8 servings:

  • 250 g flour
  • 2 tsp baking powder
  • 1 pinch of salt
  • 75 g sugar
  • 1 egg(s)
  • 150 g butter, soft
  • 350 g sour cherries
  • 3 tbsp sugar
  • 250 g quark
  • 2 eggs
  • 200 g marzipan paste
  • 38 g vanilla pudding powder

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 33 minutes; Total time approx. 2 hours 3 minutes

A true marzipan dream

For the dough: Mix the baking powder and flour in a large bowl. Add the sugar, salt, butter, and egg and mix with the dough hook of a hand mixer until smooth. Shape the dough into a ball, wrap in plastic wrap, and let it rest in the refrigerator for about 1 hour. For the filling: Drain the cherries well. Coarsely grate the marzipan and mix it with the quark, sugar, eggs, and vanilla pudding powder using the whisk of a hand mixer until smooth. Grease the tartlet cases and divide the dough into 8 equal portions. Flour the work surface. Roll out the dough pieces into approximately 14 cm circles, place them in the cases, adjust the size, and pierce the base several times with a fork. Distribute the drained cherries among the cases, pour the filling over them, and smooth the surface. Bake at 180°C (top/bottom heat) or 160°C (fan oven) on the lowest rack for about 33 minutes. Remove the tartlets from the pans, let them cool on a wire rack, and decorate as desired. Note: The ingredients are enough for 8 tartlet pans with a diameter of approximately 10 cm.
