Tarte flambée with Comté

Ingredients for 2 servings:

  • 10 g yeast
  • ½ tsp sugar
  • 300 g flour
  • 3 tbsp oil
  • 175 ml water
  • 2 onions, red
  • 200 g sour cream
  • 125 g cheese (Comté), grated
  • 100 g ham, diced
  • salt and pepper
  • Herbs of Provence or other

Working time approx. 45 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 50 minutes

Preheat the oven to 250 degrees Celsius (482 degrees Fahrenheit). Crumble the yeast, mix with the sugar, and 50 ml of lukewarm water. Knead the flour with 1/4 teaspoon of salt, the oil, 125 ml of water, and the stirred yeast into a smooth dough. Let the dough rise for 45 minutes. Dice the onions, mix with the sour cream, and season well. Now grate the cheese and dice the ham. Line a baking sheet with baking paper. Divide the dough in half, knead thoroughly, and roll each out into a very thin oval cake. Spread the onion sour cream on top and sprinkle with ham and cheese. Bake the tarte flambée for 10 to 20 minutes at 250 degrees Celsius (482 degrees Fahrenheit).
