Ingredients for 8 servings:
- 1 kg zucchini
- 1 m.-sized onion(s)
- 700 g minced meat
- 250 g rice
- 2 tsp paprika powder
- salt and pepper
- 150 g tomato paste
- 1 liter of water
- 4 tsp vegetable stock powder
- 200 g feta cheese
- some oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour
Wash the zucchini, hollow it out, and cut into cubes or thin slices. Peel the onion and cut into small cubes. Fry the minced meat in a little oil. Once the minced meat is cooked through, add the chopped onions and fry until translucent. Then add the zucchini and sauté for about 5 minutes. Add the rice, spices, and tomato paste and stir to combine. Mix the water with the vegetable stock and pour into the pot. Let everything simmer gently for about 20 minutes on medium heat, watching closely. Caution: If you’re not careful, the dish may burn on the bottom. If it becomes too thick, add a little water. You can also add your own spices to taste. Meanwhile, dice the feta and place it in a bowl. Once the rice and zucchini are tender, serve the dish with the feta.
