Zucchini rice pot with minced meat and feta

Ingredients for 4 servings:

  • some oil for frying
  • 1 onion(s), finely chopped
  • 250 g minced meat, mixed
  • 100 g long grain rice
  • 500 ml vegetable stock
  • 500 g tomatoes, pureed
  • 1 garlic clove(s), finely chopped
  • 1 tbsp sugar
  • 1 tbsp oregano, dried
  • some chili powder
  • some salt and pepper
  • 2 small zucchini
  • 150 g feta cheese

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Briefly fry the chopped onion in a little oil. Add the ground beef and fry until crumbly. Then add the rice and fry briefly. Pour in the vegetable stock and passata. Mix in the garlic, sugar, and oregano. Season the mixture with a little chili powder, salt, and pepper. Let it simmer gently for about 10 minutes. Meanwhile, cut the zucchini into approximately 1 cm cubes and add them. Let everything simmer for another 10 minutes. Divide the zucchini and rice mixture among the plates and sprinkle with diced feta cheese. Serve with baguette. One serving serves 4, with a total of 480 calories.
