Cheese – Ham – Muffins

Ingredients for 1 servings:

  • 150 g mushrooms
  • 1 tbsp oil
  • 100 g ham, raw or
  • ½ bell pepper(s)
  • 200 g wheat flour
  • 3 tsp, leveled baking powder
  • 150 g cheese (Emmental), grated
  • 3 eggs
  • 200 g milk
  • Salt and pepper from the mill
  • Fat for the mold
  • Flour for the mold
  • cheese for sprinkling

To prepare, clean the mushrooms and cut into pieces. Sauté them in oil, let them cool. Cut the ham into strips. For the batter, combine the flour and baking powder and sift them into a mixing bowl. Add the cheese, eggs, and milk and mix with a hand mixer until a dough forms. Add the mushrooms and ham strips, mix briefly, and season with salt and pepper. Pour the batter into a greased and floured muffin tin and place them on a rack in the oven. Bake at 160°C (convection oven) or 180°C (conventional oven) for approx. 20-25 minutes. Let the muffins stand in the tin for 10 minutes, then remove from the tin and serve lukewarm. Instead of the ham, fold in 1/2 a cleaned, very finely diced bell pepper. The muffins taste best lukewarm and should be reheated briefly. They can also be sprinkled with grated cheese before baking. Serve the muffins as a snack or small meal with a mixed salad.
