Sweet cherry and orange marmalade

Ingredients for 1 servings:

  • 1,000 g sweet cherries, net weight
  • 450 g organic orange(s), weighed net
  • 2 organic oranges, juice
  • 50 ml lemon juice
  • n. B. Gelling sugar 1:1
  • some cherry liqueur

Instructions

Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 4 minutes; Total time approx. 1 hour 34 minutes

Wash and pit the cherries. Reserving the juice, add it to the cherries. Peel the oranges, trimming off the white pith and cutting into large pieces. Puree the cherries with the oranges (it doesn’t need to be completely fine). Add the orange juice and lemon juice. Weigh the total amount and stir in the same amount of gelling sugar at a 1:1 ratio. Bring to a boil, then simmer for 4 minutes. Remove from the heat and stir in a little cherry liqueur. Pour into prepared jars rinsed with hot water, seal, and leave upside down for about 10 minutes.
