Salmon on grilled watermelon

Ingredients for 2 servings:

  • 2 slice(s) of watermelon, approx. 1.5 cm thick
  • 300 g salmon fillet(s), fresh
  • 10 basil leaves
  • 1 pinch(s) of pepper
  • 1 pinch of chili

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Trim the edges of the watermelon slices. Cut the salmon into very thin slices (skinless). Grill the watermelon slices over high heat for about two minutes on each side. Turn them over after one minute. Then remove from the grill, season one side with pepper and chili, and then top with the basil leaves and then the salmon strips. The watermelon should then be covered with a layer of salmon about 0.5 cm thick. Place everything together on the grill, salmon side up, for about 10-15 minutes at a slightly reduced heat with the lid closed. It is recommended not to place the watermelon directly on the grill at this point, but to use a grill tray, for example. When the protein from the salmon begins to set on top, the dish is ready. Serve with a green salad, for example. Tip: Alternatively, simply cut into small rectangles, skewer with cocktail sticks, and serve as a snack or appetizer.
