Christmas apple muffins with cinnamon frosting

Ingredients for 1 servings:

  • 120 g butter, soft
  • 120 g sugar
  • 2 eggs
  • 120 g flour
  • 1 tsp cinnamon powder
  • 2 apples
  • Liqueur (apple cinnamon liqueur), recipe by eli2010
  • 10 g sugar (Christmas sugar), recipe from Rosinenkind
  • 100 g double cream cheese
  • 60 g butter, soft
  • 1 tsp cinnamon powder
  • 250 g powdered sugar, sifted

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Preheat oven to 170°C and grease a 12-hole muffin tin. Dough: Whisk together butter and sugar, then beat in the eggs one at a time. Mix the flour with the cinnamon, add a little of Raisinkind’s Christmas sugar, and mix everything with the butter and egg mixture. Peel and finely grate the apples and fold them into the batter. Add a dash of eli2010’s apple cinnamon liqueur and mix. Divide between the muffins and bake for about 25 minutes at 170°C. As soon as they come out of the oven, immediately drizzle the muffins with about 1 teaspoon of apple cinnamon liqueur per muffin. Frosting: Beat cream cheese with butter. Stir powdered sugar and cinnamon into the cream cheese mixture, fill a piping bag, and spread on the cupcakes. Tip: Dust with cocoa powder or cinnamon, if desired, or garnish with apple slices.
