Ingredients for 4 servings:

  • 4 pieces of bread (Vinschgerln, alternatively 250 g farmer’s bread)
  • 50 g lard
  • 100 g mountain cheese
  • 125 ml milk
  • 2 eggs
  • 2 tbsp flour (rye or buckwheat flour)
  • 1 tsp parsley, chopped
  • salt and pepper
  • Clarified butter, for frying

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the Vinschgerl or farmer’s bread into small cubes and then pour the hot lard over them. Add the parsley and cheese and season with salt and pepper. Combine the eggs with the milk and add to the mixture, mixing well. Let stand for 5 minutes, then form into dumplings. Place in a hot pan with a little clarified butter, flatten the dumplings, and fry on both sides until slightly hot.
