Fruit gingerbread

Ingredients for 1 servings:

  • 50 g honey
  • 50 g butter
  • 3 eggs
  • 200 g flour
  • 200 g oat flakes
  • 150 g sugar
  • 100 g raisins
  • 1 tsp gingerbread spice
  • 1 tsp ammonium bicarbonate
  • ½ tsp potash
  • some lemon(s), the peel
  • 50 g candied lemon peel
  • 50 g candied orange peel
  • 100 g dates
  • 100 g fig(s)
  • 50 g hazelnuts, chopped
  • 50 g almonds, chopped
  • 250 g powdered sugar
  • 2 tbsp water
  • 3 tbsp lemon juice

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Heat the honey and fat together and let cool again. Beat the eggs and sugar until frothy. Finely dice the dates and figs. Dissolve the ammonium chloride and potash separately in water. Mix all ingredients together quickly. Spread the entire mixture onto a greased baking sheet, preferably with wet hands. Bake at 190°C for approximately 25-30 minutes. Mix the powdered sugar, water, and lemon juice, then cover the gingerbread with the icing while it’s still hot. Once cooled, cut into small pieces. It will keep fresh for a very long time in a tin. You can also use a chocolate glaze and sprinkle it with sugar sprinkles.
