Spinach soup with gnocchi and meatballs

Ingredients for 4 servings:

  • 3 packs of frozen spinach
  • 1 bulb(s) garlic
  • 2 onions
  • 1 pack of feta cheese
  • 1 pack of gnocchi (500 g)
  • 500 g minced meat
  • some milk, optional

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Thaw the spinach. Season the minced meat, form into small balls, and fry. Roughly chop the onions and fry until translucent. Finely chop the garlic and fry briefly. Prepare the gnocchi according to the package instructions. Dice the feta. Combine all ingredients, except the feta, in a large pot and simmer gently. Add a little of the gnocchi cooking water or a little milk. Just before serving, add the feta and season with pepper. You can omit the garlic if you don’t like it, or replace it with ginger.
