Ingredients for 8 servings:
- 2 ½ kg pork neck, with bone
- 2 kg salt
- 2 sprigs rosemary
- 5 juniper berries
- 5 bay leaves
- 10 peppercorns
- ¾ kg pasta
- 1 ½ rings of meat sausage
- 30 g peas, frozen, 2-3 handfuls
- 1 jar of pickles
- 2 large onions
- 4 large eggs
- 2 jars of Miracle Whip
- 1 tsp mustard
- 1 tsp, heaped salt
- 1 tsp black pepper
- 5 basil leaves
- 2 large eggs, hard-boiled, for decoration
- 2 small tomatoes, for decoration

Salt roast: Have the butcher remove the bones, but take them with you. Place baking paper on a baking sheet, place the bones on the paper, and then the meat on the bones. The bones make the meat even juicier. Sprinkle salt around the roast. Break the rosemary sprig into several pieces and scatter them on the salt. Sprinkle the other spices and herbs on the salt as well. Now put the roast in the oven and cook at 160 degrees Celsius for about 3-3.5 hours. If you open the oven halfway through, the delicious aroma will immediately hit your nose. The roast doesn’t need to be turned, nothing at all. If you have one, you can put a thermometer in the roast. Pasta salad: Cook the pasta according to the package instructions. Hard-boil the eggs. Cut the sausage, cucumber, onion, and egg into small cubes, add the frozen peas. Add the drained pasta and mix well but gently. Add Miracle Whip and the mustard. Season with salt and pepper. To get the last bit out of the mayonnaise jar, I always pour a little pickle juice into it, shake it vigorously, and the flavor stays with it. The pasta salad can now sit until the roast is done. To create the zigzag pattern, simply hold the egg or tomato in one hand and cut diagonally and then diagonally with a small, sharp kitchen knife. Just make sure it’s deep enough. Then simply remove it like a cap. Both can be prepared well in advance. If the roast is still a little warm, it will absolutely melt in your mouth.
