Pork goulash with apricots

Ingredients for 4 servings:

  • 2 large onions
  • 2 tbsp fat for frying
  • 1 tbsp curry powder
  • 2 tbsp sugar
  • pepper
  • 500 g pork goulash
  • 125 ml meat broth, a strong
  • 500 g apricot(s)
  • 3 tbsp crème fraîche

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes

Peel the onions, dice them finely, and sauté them in hot fat. Stir in the curry powder, sugar, and pepper and fry until the sugar caramelizes. Then add the goulash and fry until browned, stirring constantly. Deglaze the meat with the meat broth and simmer in a covered pan over moderate heat for about 40 minutes. Halve the apricots, remove the stones, and cut them into strips, and sauté for 3 minutes. The apricots should not become too soft. Finally, stir in the crème fraîche and season the goulash again for a little more spice. Serve with rice.
