Ingredients for 4 servings:
- 1 kg ribs (smoked pork chops)
- 2 large onions
- 3 tbsp sugar
- 1 kg sauerkraut
- 250 g grapes, seedless
- ¼ liter sweet cream
- ¼ liter of water
- Salt
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Cut the ribs into portions and sear the fat side first in a large pot without oil. Then sear the other side, remove the ribs from the pot and set aside. Dice the onion and sauté in the hot rib fat. Sprinkle the sugar over the ribs and caramelize the onions. Return the ribs to the pot and deglaze with 1/4 liter of water. Drain the sauerkraut, spread it over the ribs, and layer the grapes on top. Then pour in the sweet cream and simmer over medium heat with the lid closed for about 50 minutes. Just before serving, season again with salt and sugar.
