Ingredients for 1 servings:
- 2 eggs
- 2 m.-sized banana(s)
- ½ tsp vanilla (bourbon vanilla)
- 150 g quark
- some sweetener of your choice, e.g. sugar, honey, stevia etc.
- some fruits of your choice
- some fat for the baking paper

My recipe isn’t made in a pan, but in the oven. Preheat the oven to 150°C (fan oven). Mash 2 bananas in a bowl with a fork. Add the eggs and vanilla and mix well with a mixer until you have a fairly smooth batter. Line a baking sheet with parchment paper and grease it as a precaution. I simply used a little oil here. Since the pancakes are quite thin, they might stick and break when you take them out. Now place even piles (about 2-3 tablespoons) on the sheet, leaving some space between them so they don’t run into each other. Place them in the oven for 10 to 15 minutes. After baking, let them cool slightly in the oven. I like to take them out when they’re lukewarm, as I personally prefer the pancakes warm with the cold quark. But both taste very good cold, too. Meanwhile, mix the quark with the fruit and sweeten to taste. I like to use frozen fruit. When the pancakes are ready, carefully remove them from the baking paper. Then place one pancake on a plate, alternating them with a layer of quark, forming a small tower.
