Cinnamon pancakes "KiBa"

Ingredients for 2 servings:

  • 75 g flour
  • 125 ml milk
  • 1 egg(s)
  • 10 g butter
  • ½ packet of vanilla sugar
  • ½ tsp cinnamon
  • 1 pinch of salt
  • 100 g cherries
  • 1 banana(s)
  • some lemon juice
  • oil
  • Powdered sugar, as desired

Instructions

Working time approx. 30 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 8 minutes; Total time approx. 58 minutes

Mix the flour with salt, vanilla sugar, cinnamon, and milk. Melt the butter (I do this quickly in the microwave). First, stir the egg into the flour mixture, followed by the melted butter. Mix well and let the batter rest for about 15-20 minutes. During this time, prepare the fruit. Halve and pit the cherries. Peel and slice the banana, and immediately drizzle with a little lemon juice. Heat the oil in a medium-sized (18-20 cm) nonstick frying pan. Pour in half of the batter and top with half of the prepared fruit, and cook for 2-3 minutes. Using a large spatula, flip the pancake and cook for 2-3 minutes on the other side. Make the other pancake in the same way. Sprinkle the finished cinnamon pancakes with a little powdered sugar, if desired, and serve.
