Valais-style tomato salad

Ingredients for 4 servings:

  • 500 g tomatoes
  • 150 g bacon or bacon cubes
  • 3 tbsp olive oil
  • 4 tbsp balsamic vinegar
  • 1 tsp mustard, medium hot
  • salt and pepper
  • Parmesan, freshly grated, optional

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Wash and slice the tomatoes. Arrange the slices fan-shaped on flat plates. Mix the balsamic vinegar, olive oil, salt and pepper, and a little mustard to make a vinaigrette. Cut the bacon into small cubes and lightly toast them in a dry pan. Drizzle the vinaigrette over the tomatoes. Then arrange the toasted bacon in the center of each plate. P.S.: If you like, you can sprinkle coarsely grated Parmesan cheese over the salad. This is how we had the salad prepared in Valais, Switzerland, and enjoyed it!
