Ingredients for 4 servings:
- 1 ½ kg potatoes
- 2 onions
- 125 g bacon, lean, diced
- salt and pepper
- 3 bell peppers
- 600 g Leberkäse
- 4 eggs
- 1 can of corn
- Paprika powder, red
- olive oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Dice the onions and bacon, slice the bell peppers into thin strips, dice the meatloaf, and drain the corn in a colander. Peel the potatoes and slice them thinly. Heat the olive oil in a pan. Add the onions and bacon and cook until translucent. Add the potato slices and season with salt and pepper. Fry for 15 minutes, stirring occasionally. Then add the bell pepper strips, meatloaf, and corn to the potatoes and continue to fry until the potatoes are tender, turning frequently. Season to taste with salt, pepper, and paprika. Meanwhile, fry the fried eggs in a separate pan. Place the fried eggs on top of the potato pan and serve immediately.
