Baked potatoes with mango and carrots

Ingredients for 2 servings:

  • 5 potatoes
  • 1 large mango(s)
  • 5 large carrots
  • 1 tsp salt
  • ½ tsp pepper
  • ½ tsp thyme
  • ½ tsp chili
  • ½ tsp paprika powder
  • 2 tbsp rapeseed oil
  • 2 cloves garlic

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Wash, peel, and chop the potatoes and carrots into small pieces. Peel the mango and cut the flesh into slightly larger pieces. Place everything in a casserole dish. Add the rapeseed oil and spices, crush the garlic, and mix everything together. Preheat the oven to 160°C for about 5 minutes, then place the dish in the oven and bake the casserole for 45 minutes.
