Ingredients for 2 servings:
- 6 potatoes, long (700 g)
- 4 tomatoes (250 g)
- salt and pepper
- 2 tsp, heaped rosemary, finely chopped
- 2 tsp, heaped thyme, chopped
- 3 tbsp oil, good
- 1 lemon(s), untreated, sliced
- 100 ml vegetable stock
- 1 large onion(s), cut into rings
- 2 garlic cloves, sliced
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 25 minutes
Peel the potatoes and cut them in half crosswise. Place them in a large bowl. For the seasoning, mix the oil, lemon juice, salt, pepper, and herbs. Pour over the potatoes and mix well. The potatoes should be well coated with the herb oil. Preheat the oven to 180°C (top/bottom heat). Place the potatoes on a baking tray. Distribute the onion rings and garlic slices over the potatoes and place in the oven for 40 minutes. After the 40 minutes of baking, briefly remove the potatoes from the oven and place the tomato pieces between the potatoes. Pour in the vegetable stock and return everything to the oven for another 15 minutes. Goes well with grilled dishes, pan-fried dishes, or simply enjoy with salad.
