Simple pea soup

Ingredients for 4 servings:

  • 1 bag of peas, frozen
  • 4 large carrots, sliced
  • 2 liters of water
  • 1 pinch(s) vegetable stock, granulated
  • 4 sausages, Debreziner preferred
  • 1 small bunch of parsley
  • some smoked bacon, diced
  • Salt
  • 700 g potatoes, peeled, diced

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Bring the water and vegetable stock to a boil in a large pot, then add the peas, carrots, and potato pieces. Simmer the soup for about 30 minutes, season with salt. Take 2-3 ladles of the soup and puree with a hand blender. Return the puree to the soup. Add the chopped parsley, sausages, and diced bacon and heat until just hot. Season the soup again before serving.
