Vegetable soup with sausage

Ingredients for 2 servings:

  • 2 sausages (Polish or Bockwurst with marjoram)
  • 4 m.-sized potatoes
  • 1 red bell pepper(s)
  • 2 tomatoes
  • 1 spring onion(s)
  • 500 ml vegetable broth, approx.
  • n. B. lovage (alternatively Maggi)
  • n. B. herb salt and pepper
  • e.g. parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel the potatoes, cut into chunks, and bring to a boil, barely covered with vegetable stock, until almost tender. Drain and reserve the stock. Chop the bell pepper into small pieces, the tomatoes into larger pieces, and the spring onion into rings. Combine everything with the potatoes and roughly puree. Stir in enough stock while stirring until a nice soupy consistency is reached. Season with salt and pepper, add the chopped lovage, and the sausages. Bring back to a boil and simmer for about 10 minutes. Stir in the chopped parsley before serving. The soup tastes almost better reheated!
