Orange Savarin Cake with Berries

The perfect orange savarin cake with berries recipe with a picture and simple step-by-step instructions.

  • 30 g Yeast fresh
  • 50 g Sugar
  • 150 ml Milk lukewarm
  • 100 g Butter
  • 375 g Flour
  • 4 Eggs
  • 125 ml Freshly squeezed orange juice
  • 75 g Brown sugar
  • 1 packet Vanilla sugar
  • 4 tbsp Orange jam
  • 1 drops Taste of rum
  • 1 tbsp Water
  • 750 g Frozen berry mix
  1. Crumble the yeast and mix with 1 teaspoon sugar and milk. Cover and let rise in a warm place for 10-15 minutes.
  2. Melt the butter in a saucepan. Put the flour in a bowl. Add the eggs, salt, remaining sugar, butter and the yeast dough. Knead everything with the dough hook of the hand mixer to form a smooth, soft dough. Cover and let rise in a warm place for 30 minutes A Savarin mold (5 liter content, for me it was only 500 ml), grease well.
  3. Knead the dough briefly and put it in the mold, rise for 5-10 minutes. Bake in a preheated oven at 175 degrees (gas: level 2-3,) (fan: 160 degrees for approx. 45 minutes.
  4. Let the orange juice, sugar, rum flavor and vanilla sugar simmer for 3-5 minutes. Turn the Savarin out of the mold onto a board. Sprinkle with the orange juice mixture. Pour the savarin back into the mold and pour the remaining orange juice mixture over it. Let it sit for about 30 minutes until the liquid has been absorbed. Then tumble out of the mold and put on a plate.
  5. Simmer the orange jam with 1-2 tablespoons of water for about 3 minutes. Strain through a sieve and brush the Savarin with it. Thaw the berries and place in the middle.
